Maria Cristina Schiazza of Illusion Cake is a consultant and teacher of pastry and cake design.
Over the years she has deepened her knowledge by following a specific course of baking at Le Cordon Bleu in Rome, culinary art school, and various courses to deepen techniques of decoration such as modeling with sugar paste, use of royal icing and creation of realistic flowers (sugar paste flowers).
Thanks also to her knowledge of foreign languages, Maria Cristina’s work takes place mainly in Europe where she holds workshops and demonstrations in schools, fairs and festivals such as Expogato, Irish Sugarcraft Show, Cake International, Cake and Bake Germany and Swiss Cake Festival .
She has won national and international awards with an Italian gold and five gold medals at the Birmingham Cake International.
She distinguished herself from many of her colleagues because she chose to offer very special cakes: the so-called “gravitational cakes”. These are desserts that defy gravity thanks to structures designed to be in contact with food and therefore safe for health. Among the most famous there are a shabby chic bedside table complete with a lamp, composed entirely of sponge cake stuffed with Italian style, a cake that represents a “roast chicken” and floating like a balloon and a plate of spaghetti with a floating fork. These cakes of great scenographic effect, much loved by adults and children, are the result of hours of study as well as great creativity.
Together with the imagination in the design, Maria Cristina also has a particular ability to create caricature characters in sugar paste, which often accompany her gravitational cakes.
Maria Cristina has always worked closely with her husband, Rocco Francescucci, who personally takes care of the study and the realization of all the structures of their gravitational cakes.
